Add a Little Green with Homemade Spinach Burgers

Ok, we know last month’s recipe was a little over-the-top. So today, we’re going to offer you some lighter and healthier fare, that doesn’t sacrifice a bit of taste. And it’s even green in honor of St. Patrick’s Day! If you’re ok with a few extra calories, we recommend serving these burgers with a dollop of ranch dressing and a few splashes of hot sauce. Even without the sauce though, they’re great on their own. Really!
Spinach Burgers
Adapted from The Village Cook
1 (10 oz) bag of frozen spinach, thawed, well drained, and chopped
2 eggs
¼ cup finely diced onion
½ cup shredded cheese
½ cup bread crumbs
1 tsp red pepper flakes
1 tsp salt
½ tsp garlic powder
Mix all ingredients in a bowl. Shape into patties and cook over medium high heat in a skillet with cooking spray. Patties are done when they are golden and firm, about 4-6 minutes. Serve by themselves, or on toasted English muffins.
