A Reputation Well Earned

Thanks to a few decades of dreaded school lunches, these nutritious vegetables have gotten a bad reputation. Like anything else, brussels sprouts will taste bad if you cook them badly. Overcooking makes sprouts soft and — even worse — makes them smell like sulfur. Boiling also strips out valuable nutrients. The fact that more than 3/4 of the sprouts consumed in the U.S. wind up being frozen might explain why so many people despise them. It’s hard to find sprouts that have been done right!

If you want to find out what people are getting so excited about, or to introduce a loved one to the joys of buffalo brussels, a few things are key to your success. First is tracking down the freshest sprouts you can find. Many farmers’ markets and expensive grocery stores sell them still on the stalk. For an option that requires less effort and expense, pick up a bag at Trader Joe’s or Costco. If you’re loyal to Wegmans, the family pack will give you the best value.

Try an interesting preparation — or two.

Here’s the thing. Very few poeple rave about plain, raw sprouts. The magic happens when you add the perfect complements and cook them just right. No matter what preparation you choose, be sure to wash your sprouts, cut off the tough stems, and remove any loose or damaged leaves. Be sure to steam, roast, stir-fry, grill, or saute them. Whatever you do, don’t boil them.
