Recipe Spotlight: No-Bake Pumpkin Oatmeal Cookies

No matter how much you love PSL season, you have to admit that nothing of note has emerged from pumpkin-dessert land for quite some time. Even if you are the type to whip up some Fiery Pumpkin Samosas, you’ll be eating them for a month if you’re hanging with a less-adventures crowd. This twist on a classic recipe will delight even the most rigid of palates. The hardest part will be tracking down the pudding mix!
Ingredients
- 1 ½ cups Sugar
- ½ cups Brown Sugar
- ¾ cups Butter
- ⅔ cups Milk
- 3 ⅓ ounces Pumpkin Spice Pudding Mix, Instant
- 1 teaspoon Pumpkin Pie Spice
- 1 teaspoon Vanilla Extract
- 3 ½ cups Rolled Oats, Quick Cooking
Directions
In a saucepan, combine sugars, butter and milk and bring to a boil. Boil 2 minutes. Remove from heat and add in the pudding mix, stirring to combine completely. Add in pumpkin pie spice, vanilla and oats. Stir to combine and let stand for 5 minutes. Drop by rounded tablespoonfuls onto waxed paper, and allow to cool completely. When your cookies have reached room temperature, they can be served!
