Sometimes you just want a hearty, tasty meal without having to do a lot of work. Enter your new best friend: the slow cooker. We love recipes like this one that let you simply dump a few ingredients in and be on your way!
This salsa chicken is tasty on its own, over rice, or as burrito filling. You’ll want to make this again and again, so get creative with your toppings to keep it interesting.
Slow Cooker Salsa Chicken
Adapted from Six Sisters Stuff
2 cans black beans
8-12oz frozen corn
1 package taco seasoning
4 chicken breasts
1 cup salsa
Mix black beans, corn and seasoning together in slow cooker. Add chicken breasts, and top with salsa. Cook on high for 4 hours or low for 8 hours, then shred chicken and mix. Serve with toppings like cheese, sour cream, hot sauce, onion, lettuce, tomato….
